I did state in my appeal letter that I was caring for my father (who has since died) and as he cared for my mum, this had put an additional strain on me . I indicated this is what was making my ME even worse.. Ive really just transferred his caring role officially to me. It did concern me that they may assume I was fit for work if I was a "carer" but when I talked to the Carer's Department of DWP they said that there was no definition of what caring entailed.. i.e. I could be sat just keeping mum company, having a cup of tea.

Yes, there is no absolute definition of "Care", it can be a multitude of things, such as watching over.
I was just making you aware, of "potential" pitfalls.
As you have stated, you only have an underlying entitlement to CA, therefore what you may receive, would depend on your personal circumstances.

Just to add to the advice you have already received.
At the moment your Carers Allowance is not payable as it is classed as an overlapping benefit with your ESA.
This is not the case with the Carers Premium, however, this is only payable with ESA(IR), not ESA(CB) as you are currently receiving.
I would therefore recommend that you get face to face advice from a trained welfare advisor who can go through you finances to see whether there would be any value in your requesting an ESA(IR) top-up to your ESA(CB) now, rather than wait for your ESA(CB) to expire due to the 365 day rule.
